Strawberry Lime Watermelon Cooler Recipe

This weekend is Memorial Day Weekend in the US.  It is considered to be the official start to summer and especially because of the fact that we've had a snowy spring here in Colorado, we are looking forward to a nice, warm weekend.  Our neighborhood pool opens up this weekend but I have no desire to go near it with temps still in the 40's and 50's at night!  Brrr...   Instead I think we will go on a hike, maybe take the kids fishing, and just enjoy not having to work for a few days.  

It's been a pretty big week for us regarding our app.  Our local paper, the Daily Camera, published an article about us and then it got picked up by the Huffington Post.  It was just super exciting to us since my husband and I spent SOOOO much time on this app the last 6 months, pretty much using every minute of our non-working and non-kid time to do it.  To see something written up about us locally, and then nationally, just made it feel like it was real and worth it.  It is a good article to learn a bit more about us and our grain-free journey as well.  You can see the article here.

On to the recipe:  This Strawberry Lime Watermelon Cooler is a perfect drink for those hot days when you want something cold but might not necessarily want a smoothie.  While we like smoothies and enjoy them sometimes as treats, they can be heavy and often leave us full.  If we just want a refreshing drink in the heat of a late summer afternoon, the last thing we want is to be too full to enjoy our dinner.  So we think this is a great alternative.  Just 4 simple ingredients with enough fruit to give it body and flavor but not too much to weigh you down.  And our son goes bonkers over it.  You'd think we were letting him have a huge ice cream sundae or something by the way he reacts!  That makes this recipe a winner in our book.

Strawberry Lime Watermelon Cooler

Serves: 3   

Prep time:  5 min

Total time: 10 min

Ingredients:

2 cups (300 g)  Watermelon, de-seeded and cut into large chunks

1 Lime, zested and juiced

3 Strawberries, hulled

2 cups (475 mL)  Sparkling Water like San Pelligrino or Perrier

 

Instructions:

1.  Place watermelon, strawberries, and lime juice and zest in a blender.  Blend until liquefied.  

2.  Stir in the sparkling water.   You can add more sparkling water if you like a more diluted drink.  

3.  Garnish with a lime wedge and serve. 

Note: This works best when all ingredients are chilled.  If that isn't possible, a few ice cubes added before or after mixing should do the trick.
