Last week I posted this post about how much I was loving the Zipzicle sleeves for making popsicles along with some recipes that I had created. The folks over at Zipzicles saw it and offered to give 5 of my readers packs of Zipzicles for them to try. I obviously jumped at the chance as these have quickly become favorite items in our household. If I had a "Favorite Product of the Summer" category (other than the fantastic Paleo books that have/are coming out this summer) I would name Zipzicles as it.
To recap what they are for anyone who may not have read the previous post, they are BPA-free plastic sleeves that resemble those that Otter Pops/Icicles/Freeze Pops come in, but are empty so you can put your own ingredients in them. This is perfect for anyone on a restrictive diet like Paleo, GAPS, or SCD or anyone just trying to get away from all of the dyes and sugars of conventional pops. And you can really put your heart's desire inside of them, which is great because as I've found out these past few weeks, coming up with new popsicle flavors is fun! But for those of you who just like to play it safe with recipes by others, my previous post has 3 flavors (Mango Peach Mint, Banana Coconut Lime, and Watermelon Coconut Blueberry Tri-Colored) and this post has 3 below.
Our almost 4 year old son has been LOVING these and jumps up and down at the mere mention of them. It's exciting for him to be able to have something that looks just like the popsicles his friends are eating, and exciting for us to know that we won't have to deal with crazy tantrums later.
First the recipes, and then the giveaway:
1/3 cup (80 mL) Honey
1/2 cup (60 g) Unsweetened Cocoa Powder (not legal on the SCD)
2 cups (300 g) Raspberries, fresh or frozen
2 tsp (10 mL) Vanilla Extract
1 cup (240 mL) Coconut Milk
If using frozen raspberries, either thaw in the fridge or cook over low heat until thawed. Blend the raspberries with all of the other ingredients in a blender or food processor until smooth. Then push the mixture through a mesh sieve to remove the raspberry seeds. Pour into Zipzicle bags and freeze.
Lavender Honey Lemon
1.5 cups (350 mL) Lemon Juice, freshly squeezed
1/2 tsp (2.5 mL) Dried Lavender
1/2 cup (120 mL) Honey
1 cup (240 mL) Water
Mix all the ingredients together in a small saucepan. Cook over very low heat for 30 min. Strain out the lavender and taste for sweetness. If you are making this for children you may want to add a bit more sweetener than if for adults. Pour into Zipzicle bags and freeze.
Blackberry Orange Cream
3/4 cup (180 mL) Orange Juice, freshly squeezed
1 cup (150 g) Whole Blackberries, fresh or frozen
1/4 cup (60 mL) Honey
1 cup (240 mL) Coconut Milk
If using frozen blackberries, either thaw in the fridge or cook over low heat until thawed. Blend the blackberries with all of the other ingredients in a blender or food processor until smooth. Then push the mixture through a mesh sieve to remove the blackberry seeds. Pour into Zipzicle bags and freeze.
